Why is Noma restaurant closing?

The fine dining restaurant in Copenhagen chose to close its doors for regular service comes the end of the year 2024. The Copenhagen creator and chef, René Redzepi, mentions this decision in an interview with The New York Times.

  • Noma turned into a full fine-dining restaurant offering at least $500 per head to enjoy its multi-course meal. Most of the time (to always), Noma focuses on gastro tourists, having them schedule a table for their visit to the country.
  • Moreover, the reason for the abrupt move is the treatment of the workers. Noma and other high-class restaurants are under close watch, as many of the workers may be paid poorly or to the extent of receiving nothing. Mind you, these workers create and serve dainty dishes to their consumers.

  • Noma restaurant faces unsustainability as their business and work require a lot of labor, long working hours, and expensive cost in maintaining and preparing the restaurant itself.
  • The main cause of the decision to reinvent Noma is the sustainability crisis they go through. Chef Redzepi states that paying around 100 employees, all while maintaining high standards is not possible.

  • Aside from the financial struggle, but also Chef Redzepi’s ill workplace behavior. In an interview in 2015, Redzepi mentions bullying his employees in a large part of his career. 16-hour labor, a bad-tempered head chef, unpaid employees, and high standards certainly do not go well in an exquisite fine-dining restaurant.

What happens to Noma?

It may close its doors to diners, but Noma reinvents itself into a “giant lab” which would be called Noma 3.0. This thought came to Chef Redzepi two years ago — during the pandemic — and started planning before as well.

  • A pioneering test kitchen dedicated to the work of food innovation and the development of new flavors, one that will share the fruits of our efforts more widely than ever before,” as written on their website, would happen to Noma 3.0.

  • The 3.0 lab would test, create, and sell these dishes using an e-commerce platform. An occasional pop-up restaurant would also happen. If you’re wondering if the whole Noma team joins this reinvention, yes.

Noma introduced the New Nordic style of cooking when it opened in 2003. Claus Meyer and René Redzepi along with the Noma team relied on local ingredients which require meticulous preparation.
